There's the pre-built tax in action. It's totally ridiculous, but you could buy the 2600, toss it in the trash, and buy 3600 for $90 and install it in under a minute. I would recommend getting the 3700x instead. From what I've seen, it performs the same as the 3800x. For RAM you should get ddr4 3600.
Getting more RAM won't give you any benefit unless you actually need it / max your current RAM out. Going from 3000 to 3200 or something won't really make any noticeable difference for gaming (maybe a few fps here and there) etc. and definitely won't be worth the money needed to buy completely new sticks.
